Minimal intervention winemaking, only a touch of preservative at bottling.
Vineyard:
Riesling grown on sandy granitic loams in the Harcourt Valley. Farmed using sustainable practices by Shannon, Leah, and John.
Winemaking:
Whole bunch pressed into stainless steel. A small portion of the ferment was separated for skin contact overnight. Raised in stainless steel over winter, with malolactic fermentation happening naturally in the spring.
Tastes of: lemon, lime, river pebble petrichor.
